ASSESSMENT OF KEY DETERMINANTS OF SAFETY PRACTICES IN FOOD PROCESSING INDUSTRIES IN RIVERS STATE

Abstract

Food processing industries play a critical role in meeting human nutritional needs and supporting economic development. Despite their importance, these industries are associated with numerous occupational and environmental hazards that may compromise both worker safety and public health. This study examines the determinants of safety practices in food processing industries, with particular emphasis on how workplace conditions, management practices, and individual behaviors influence adherence to safety standards. Food processing involves multiple stages such as washing, chopping, pasteurizing, freezing, fermenting, packaging, and cooking, all of which present varying degrees of risk to workers and consumers if not properly managed. The study highlights that inadequate recognition and control of occupational hazards remain a major challenge in many food processing settings. Factors such as poor sanitation, lack of safety training, insufficient regulatory enforcement, and limited access to clean water contribute significantly to unsafe practices. Additionally, the study underscores the public health implications of poor food safety practices, particularly in relation to foodborne diseases such as typhoid fever. Evidence suggests that a significant proportion of individuals tested using the Widal test show positive results for Salmonella typhi, indicating possible exposure through contaminated food or water. This is especially prevalent in regions with poor sanitation infrastructure. Findings from this study emphasize the need for improved safety awareness, stricter compliance with hygiene standards, and effective management strategies within food processing industries. Addressing these determinants is essential not only for protecting workers but also for ensuring the safety and quality of food products consumed by the public. The study concludes that a comprehensive approach involving policy enforcement, education, and infrastructure development is necessary to enhance safety practices and reduce the burden of foodborne diseases.
